Stephen Miller, CMC

Master Chef Stephen Miller earned the Certified Master Chef title in 1985. 

Career highlights:

– Entered the culinary profession at the age of 15 when he joined the British army catering corps.

– Spent 15+ years in the corps.

– He is well versed in many cuisines, because of his classic french training he has a great fondness for that and regional french cookery, he has a deep love for food history across the whole world.

– When young, he was a fierce competitor, he has over 35 major national and international culinary awards to his name and numerous regional awards.

– Most notable awards twice grand prize winner of hotel olyphia, twice grand prize winner madam prunier joint services grand prize winner. three times grand prize winner army catering corps international culinary competition, twice elevated two table of honor saloon de londres, grand prize award national restaurant show Chicago, grand pastry prize national restaurant show Chicago, grand prize Culinary Olympics.

– He was a judge at the National Restaurant Show judging with such notable judges and friends as Jack Braun, Casey Sinkerson, Baron Galand, Hans Bushkins, Ferdinand Metz.

– He coached/advised the American army to win success at the world cup and the Olympics on a number of occasions.

– He has illustrated a cook book and various trade journals.

– He owned the most successful bakery in Chicago for 15 years making cakes for many famous people such as Oprah Winfrey, Michael Jordan, Walter Payton.

– He has planned, built, manned, overseen and ran over 30 food locations. 

He oversaw with two partners Mccormick Place, for 4 years, the world’s largest jail, cook county jail, and the casino queen in east St. Louis.

– He still works for the same two brothers for 27 years and also now consults for their daughter.

– He worked for a large poultry company where he brought new products to market, many of which are still sold nationwide. The most notable of these was he was the first person to put through Washington Marinated Chicken.

– He lives in the suburbs of Chicago with his wife of 51 years Geraldine, who was and still is the best dish he ever got his hands on.

– He loves passing on knowledge to his colleagues and young chefs.

– His credo is: in teaching we learn.

– He is the recipient of a special medal from the worshipful company of cooks, was a prior winner of the general John McLaughlin award and two presidential ACF awards.

– He was a culinary educator for years.
